Roasted Tomato Soup

Good Monday Morning Foodies!  I hope you all had a great weekend. Nick and I sure did. Nick’s dad just bought a boat and showed it at the Annapolis Boat Show this weekend. We drove up to see the boat and visit with his dad. We found out that his Uncle Larry and Aunt Lynda, along with his older sister and her kids were going to make appearances so I was pretty excited. I love Larry and Lynda; they happen to be some of my favorite people in the world. Larry is candidly hilarious and Lynda is reserved and French. In my mind they are the perfect couple. Being around them is always so much fun. Lynda and I have a mutual bond over all things fashion – heels, purses, clothes, etc. She’s a girls, girl. I am always excited to know they are going to be around.

Renee and the kids came down too. Renee is Nick’s older sister and she has three fantastic kids – Cecilia, Brendan, and Cole. They are great. Cecilia is developing a mutual love for fashion. Brendan is the mellow middle child. He takes what he is dealt and hopes to pick up a new hat or some new kicks along the way. He’s a great kid! Then there is Cole. He’s the youngest and was all about crawling around on every floor he walked on, spilling his water and these things called DaGeDar’s. It was great seeing them.

The boat was great. It is very cozy and will be absolutely beautiful out on the water. It will take some time getting used to the rocking, especially for Pippy. Pippy, of course, stole the show. After several hours on the boat on Saturday he threw up on Nick. I didn’t know that Nick fed him an ENTIRE pretzel though, so I think that helped the sea sickness along, but after he got sick he came over to me, cuddled up and fell asleep upside down. I felt pretty bad for him.  Aside from that little debacle, the only concern I have for Pippy is falling overboard. He’s pretty inquisitive, so he was sniffing around the boat, especially around the edges. I was pretty sure he was going in the water and the boat was not even moving. Hopefully, we will figure something out.  Other than that trauma, Pippy had one other incident. The stairs that lead to the top of the boat {on the inside, at least} are a little steep for a small puppy. Nick & I wanted to know if Pippy could manage to come down the stairs. We were coaching him down and he was doing so well. But he was taking a little time {curiosity coupled with sensory overload and a side of nervousness will do that}, which was not a big deal to anybody except Nick’s mom. So she decided to KICK him and he fell down the steps onto his poor little puppy face. I was appalled. I still do not have any words that are classy enough to say out loud or write down; so I bit my tongue and avoided any type of confrontation. This was Joe’s weekend. It was about celebrating his accomplishments and his dreams. So I did not say anything that I wanted to say. All I have to say is thank GOD Pippy was not injured. He sat on my lap the rest of the time we were on the boat. We both were ready to leave. 

Aside from all of the boat show stuff, Annapolis is a great city. Nick and I cannot wait to go back and walk around to explore. It was great to see all of the shops, sailors and people hanging out having a great time. Oh, and it’s such a dog friendly place. It’s perfect for us! However, in a town full of sailors, I felt like the only Army chick. I had to wait to put on my Army sweatpants when we were in the car because I did not want to be booed out of town.

Aside from all of the excitement we ate pretty well. I wish I would have taken pictures of our food, but that did not happen. Instead of showing you pictures of our weekend foodie adventures, I have a GREAT Meatless Monday recipe. Today I have Roasted Tomato Soup. Yep, you heard me. ROASTED TOMATO SOUP! It was delicious. You have to give it a try!

Serving Size: 1 bowl/crock, 2 baguette slices, 1/6 cheese

Here is what you will need:

Recipe adapted from Smitten Kitchen

  • 3 pounds tomatoes halved lengthwise
  • 1 red pepper, sliced
  • 2 tablespoons olive oil
  • 4 garlic cloves, unpeeled
  • ¼ teaspoon dried thyme
  • ½ tablespoon dried crushed red pepper
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 4 cups chicken broth
  • Baguette, sliced in ½ inch thickness
  • 2 cups cheese, shredded

Directions:

  • Preheat oven to 400 degrees F
  • Wrap garlic cloves in a tight foil packet

  • Place tomatoes & red pepper slices, cut side up, on a large baking sheet
  • Sprinkle generously with salt and pepper
  • Drizzle tomatoes with olive oil
  • Add foil packet of garlic to tray

  • Roast until tomatoes are brown and tender, about 1 hour
  • Cool Slightly
  • Now, unwrap garlic packet and peel cloves
  • Transfer cloves, tomatoes and any accumulated juices to a blender and pulse machine on and off until tomatoes are a chunky puree

  • Transfer tomatoes to a medium pot, add thyme, crushed red pepper flakes and stock. Bring to a boil. Reduce heat to a simmer and cook, uncovered, for 25 minutes
  • Remove from heat and adjust seasonings to taste

  • Preheat oven to 350 degrees F
  • Arrange six ovenproof soup bowls, crocks, mugs on a large, foiled lined baking sheet
  • Float a slice or two of the baguette, buttered side up, in each bowl
  • Top each with a generous amount of cheese

  • Bake soups on tray for about 20 minutes, until cheese on top is bubbling and brown at the edges
  • I broiled it for a few minutes at the end. You can do the same
  • SERVE IMMEDIATELY & ENJOY!!

I loved this soup. Nick and I dug right in and it was fabulous. We ended up eating really late at night, so I apologize for the inadequate pictures. It really did not matter at that point. We were starving. The house smelled delicious. We dug right in {and so will you!}
