Macaroni & Cheese Mini Quesadilla's

Well, I L-O-V-E macaroni and cheese. If I were ever banished to an island, I would take MY macaroni and cheese with me. I would have stomach issues {no further details needed, I’m sure}, but I would be fat and happy.
I was delighted to make macaroni and cheese for our family on Easter. It was probably the BEST macaroni and cheese I have made thus far in my life. I used the crockpot like I normally do, but decided to broil it for about 30 minutes. It was fantastic! I love the broiled cheese flavor.
Because I made so much of it, I have been eating it all week. Last night I finished off the remainder of it. It was sad. However, I decided to put it to good use. Check out these delicious Macaroni and Cheese Mini Quesadillas.

Ingredients:
- 2 flour tortillas
- 1.5 ounces macaroni and cheese {ingredients for macaroni & cheese below}

Directions:
- With a small cookie cutter, cut out 14 circles from the 2 flour tortillas
- Grease a large skillet with cooking spray and heat over medium – high heat
- Add half of the tortilla circles to the pan and brown each side until golden brown
- Repeat the process for the remaining tortilla circles
- Now add about a teaspoon of the macaroni and cheese to one of the tortilla circles and top with another tortilla.
- Secure with a toothpick and ENJOY your bite-sized morsels of goodness

Macaroni & Cheese Recipe
Ingredients:
- 1 box medium pasta shells
- 10 ounces cheddar cheese, cubed
- 1 cup milk
- 1can cheddar cheese soup
Directions:
- Cook the pasta according to the directions on the box
- Add all of the ingredients, including the cooked pasta, to your crock pot. Cook on high for 4 hours
- Preheat oven to Hi broil. Remove macaroni and cheese to a lightly greased baking dish
- Broil for about 30 minutes or until the cheese is nicely browned and bubbly
- ENJOY!
I hope you give these little guys a try. They are SO good. I love the slight sweetness that the flour tortilla brings to the recipe. They will be PERFECT for a meal or appetizer this weekend!
