Loaded Smashed Potatoes

It’s right before noon on Wednesday and I have absolutely no motivation. I thought I was developing a kidney stone yesterday, so in an attempt to combat the pain that was getting increasingly worse through the afternoon I decided to take some medicine, which knocked me out. I credit most of how I feel right now to a decision I made just less than 24 hours ago. I thought the medicine would wear off in about 6 hours… maybe it’s because I am so small that it is affecting me this way? Maybe I took a rogue pill? Who knows? I apologize for not getting this post to you until now.

The other day I made these delicious Loaded Smashed Potatoes. They were a great adaptation to a regular smashed potato recipe, which is why I thought I should share them with you.

{Warning}: It takes about 90 minutes to make them, plan accordingly!

 Here is what you will need:

  • 10 red potatoes
  • 2 slices bacon, cooked crispy & crumbled
  • 2 ounces blue cheese, crumbled
  • 1.5 tablespoons Olive Oil
  • ¾ cup water 
  • salt and pepper, to taste


  • Preheat oven to 475 degrees F
  • Place an oven rack at the top of the oven and one at the bottom of the oven
  • Wash your potatoes thoroughly and placed on a lightly greased baking pan
  • Add the water to the bottom of the pan and cover the potatoes with foil
  • Place the potatoes on the bottom rack and bake for about 30 minutes
  • Remove from the oven, remove foil and allow the potatoes to sit for about 10 minutes
  • Remove the potatoes to a large bowl and coat with about 1 tablespoon of olive oil, making sure each potato is evenly coated
  • Line  the potatoes on a baking sheet, then take a cup and lightly smash each potato so that it’s about ¼ to ½ inch thick
  • Sprinkle the potatoes with the remaining olive oil, salt & pepper
  • Place on the top rack of the oven and allow to cook for about 15 minutes. You want a nice golden crisp look to it.
  • Remove to the bottom rack for an addition 20 to 30 minutes. You don’t want the potatoes to over cook you just want them crispy. Beware!
  • About 10 minutes before your potatoes are cooked to perfection add the blue cheese and crispy bacon to the top of each potato; cooking until the cheese is melted
  • Remove & Enjoy!

These are lovely potatoes. Nick and I really enjoyed them. I think adding the blue cheese and bacon to the potatoes was a fantastic idea – it just give them something extra. If you wanted to cut up a couple of green onions to sprinkle on the top that would be a great idea, too!
