Thinly Sliced Turkey Breast Grilled Cheese English Muffins
Wednesday, August 17, 2011 at 11:29AM Happy Wednesday Foodies!! I am writing from my living room this morning; looking out of our double doors that lead to our deck with the sun shining. That is nothing new. I do this a lot. However, there is one very incredible difference this morning in our living room – our new television. Yesterday was quite the adventure and we both single handedly installed the wall mount and a gigantic television. Seriously, this television is no joke. It takes up half of the wall it is mounted to… something like 50 inches. I am super excited about this television now that it is up. It is the granddaddy of all televisions – it is a SMART TV, it is 3D, HD, equipped with everything but the kitchen sink. I actually cannot wait to get started with all of its fun capabilities. Personally, I want to get a wireless keyboard and get to all of your websites in super big form.
Originally I was not that excited because of the 3D capability. I did not want a 3D T.V., but we needed a new television. But now that the monster has arrived and is sitting in front of me, I cannot hide my love for it. I want to pet it and give it a kiss and watch it all day long.
Today is a fairly big day, so none of that is going to happen. I mean, I may be able to work in a kiss or a pat, but it’s not going to happen often. Today Nick and I are having dinner with his sister, Chantelle, her boyfriend, Keith, and his parents later. Chantelle and Keith are leaving for Cambodia tomorrow; they are moving there for almost a year. I am so jealous, yet incredibly excited for them!
Okay, let’s move onto the food portion of this post. Nick and I were fairly busy last night with trips to Lowe’s and getting this television set up. But in the mix of it all I whipped together a cool, healthy and light twist to one of America’s favorite sandwiches. Nope, not a burger. Sorry. Today I give to you Thinly Sliced Turkey Grilled Cheese English Muffins!!!!

Serving Size: 1 Sandwich, 2 olives
Total Calories: 210

Here is what you will need, for 1 sandwich:
- 1 English Muffin
- 1 Slice Cheddar Cheese
- 2 ounces thinly sliced lean turkey breast lunch meat
- Mustard
- Olive/s
- Butter/Margarine/Faux equivalent [which is what I used]
Directions:
- Slice the muffin through the middle
- On the nooks & cranies side, slightly bread the butter to each half
- On the flat side, layer mustard, ½ slice of cheese, turkey, the other ½ slice cheese
- In a medium skillet, heat over medium heat
- When the skillet is heated, place the English muffin butter side down in the pan
- Flip after the butter side down is golden brown and crisp, about 3 to 5 minutes, per side
- Top it with an olive or two and eat away
I love this sandwich. When I first started weight watchers I used to eat English Muffin sandwiches all of the time. I was able to eat 2 of them with some of my favorite low calorie potato chips for lunch or dinner and only use a few points. That was one of the best things for me – finding foods that I enjoyed and were low calorie so that I could eat a lot of it. With this new weight watchers program, my age-old muffin sandwich is a couple of extra points, but that is okay. I will take it any day of the week.
