Buttermilk Oven Baked Chicken & Waffles [with an award on the side]

Happy Tuesday Foodies! I am having a difficult time writing a post today for so many reasons. I wish I could talk about each of those things that are troubling me and are now manifesting in a way that is affecting my ability to write a post. It is not important to the foodie world; however, I do wish I my real life was as easy as my virtual life. It would be simply blissful.

I will tell you that much of my time these past six months has been filled with great anxiety, frustration and a combination ball of a bunch of other emotions;  even now as I sit here thinking about life, I feel a well of emotions building up inside of me.

I sometimes get lost in my emotions, in my work, and now in my virtual foodie world. Thinking about blogging and cooking makes me excited and is a reprieve from my adult life. When I am cooking, researching and creating my mind is focused on those things and the emotions in my other life are easily managed; easily suppressed.

Until today…

Today I cannot focus. I knew this day was coming, I really did. I knew at some point all of the fear and worry, anxiety and emotions would bubble up from deep within and manifest itself like this, because it always does.

On top of it all, I’m addicted to food. Not only am I addicted, I have no self-control so when I feel a morsel of emotion – happy or angry and all of those things in between – I want to eat everything in my sight. I am desperately trying NOT to do that right now, but I have a box of cereal by my side and an entire day to eat myself into a corner.

As a result of that food obsession, when I started looking through my list of recipes that I have to blog about, my eyes kept wandering back to one in particular because I wish I had five servings to eat right now. I bet you’re all wondering what could ease my Tuesday pains, right? Well today I bring to you Buttermilk Oven Baked Chicken and Waffles.

Recipe Adapted from The Neely's

Let’s get down to business. Here’s what you will need:

  • 2 cups buttermilk
  • 1 tablespoons fresh lemon juice
  • 2 tablespoons hot sauce
  • 3 cloves garlic, pressed
  • Salt and pepper, to taste
  • 3 large chicken breasts, cut into pieces, rinsed and patted dry
  • 2 cups crushed corn flakes
  • 1 cup grated Parmesan cheese

Directions:

  • Preheat oven to 400 degrees F
  • Mix together buttermilk, lemon juice, hot sauce, garlic, salt and pepper in a large bowl

  • Add chicken and coat with mixture

  • Cover with plastic wrap and place in the refrigerator for 3 hours or up to 12 hours
  • Mix corn flakes and parmesan cheese together. Season with salt and pepper.

  • Remove chicken from the marinade, letting the excess drip off and dredge through the corn flakes – parmesan mixture, pressing to help it adhere
  • Place on a greased baking sheet and bake for 45 minutes until golden and crisp

I love chicken and waffles and because I have a Belgian Waffle Maker, I whipped up a few waffles to pair with the chicken. If you want to do the same, just follow the instructions on your Waffle Mix – yes, you read that right, I used a boxed waffle mix. No judgments please. I also decided to make gravy and mashed potatoes because there is nothing better than Chicken and Waffles with mashed potatoes and all of it smothered in gravy.

This is DEFINITELY not the healthy food I was talking about yesterday on my facebook page, but it is comfort food at its best and I need a lot of comfort today. Though I do not have this on hand, just thinking about it and writing about it makes me feel better. See how sick I am? There is no helping me.

Amen! Just reading about it and looking at the pics makes me feel better. And since I don't eeeeeven have a waffle iron any more, I won't be having this deliciousness today. Actually, I guess I could have the chicken & mashed potatoes & gravy, huh? :) Love ya, Mel!
