Nick really likes baked oatmeal. I have to be honest, I do not like oatmeal of any kind, even the sweetest baked oatmeal somebody could make me. However, I love oatmeal raisin cookies - figure that one out. All of the ingredients in baked oatmeal are sweet and delicious, but together the dish does nothing for me. With all of this being said, I made Nick Baked Oatmeal for dinner last night. Today is our anniversary and I figured I would not be able to make one of his favorite breakfasts this morning before work, so instead he got it last night. I figured this would be a cute way to show how much I love him. When we go out to breakfast back home and baked oatmeal is an option he always gets a side of it. To me it is a meal, but Nick would eat this any chance he could with his meal.
I was having a difficult time thinking of other foods to pair with it because it seems to stand very strong on its own. That is when I got the brilliant idea to include fresh fruit on the bottom of it! What better way to spruce up a dish like this than to pair it with beautiful blueberries? That's what I thought!
The great thing about Baked Oatmeal is that you can dress it up any way you like. For instance, last night I did a fruit-on-the-bottom baked oatmeal with blueberries. But you can use strawberries, chopped and peeled apples or bananas. It is that easy!
Here are the ingredients you will need [to make blueberry baked oatmeal]:
- 2 1/2 cups old fashion oats
- 1/3 cup brown sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1 cup milk
- 2 eggs
- 1 teaspoon vanilla
- 2 tablespoons oil
- 2 (3 ounce) containers of blueberries
- 2 tablespoons brown sugar
- 1/2 teaspoon cinnamon
- In a microwave safe bowl, combine blueberries, 2 tablespoons brown sugar and 1/2 teaspoon cinnamon
- Microwave for 3 minutes or until blueberries burst slightly
- In a large bowl, combine oats, brown sugar, baking powder, salt and cinnamon
- Combine the milk, eggs, vanilla and oil in a small bowl
- Add the wet ingredients to the dry ingredients
- Stir well until blended
- Let stand 5 minutes to absorb moisture
- this is important!! if you fail to do it, it will be a mushy mess later!
- Pour over blueberry mixture and spread evenly
- Bake at 350 degrees for about 30 minutes or until knife inserted in center comes out clean
- Cut into squares and serve with milk or syrup
