Peanut Butter Chip Chewy Chocolate Cookies
Saturday, March 12, 2011 at 1:07PM From an early age, I remember loving chocolate cookies with creamy peanut butter chips. Each week at the grocery store I used to love going in and finding my favorite little treats off to the right. The problem with something this tasty is everybody else in the world loved eating them, too. So I would have a difficult time finding them when I wanted them. Over the years I have considered making them and I finally did this week! It was well worth the wait, but puts me in a dangerous position: now I know how to make them, they are delicious and I am craving them like you cannot believe! I have been trying to discourage myself from making another batch and eating them all myself.
Here are the ingredients you will need:
- 2 cups all purpose flour
- 1 teaspoon baking soda
- 1 1/4 cups butter, softened
- 2 eggs
- 1 package plus 1/2 cup peanut butter chips
- 3/4 cup cocoa
- 1/2 teaspoon salt
- 2 cups sugar
- 2 teaspoons vanilla extract
- Preheat the oven to 350 degrees F
- Stir together flour, coca, baking soda and salt, set aside
- Beat butter and sugar in large bowl with mixer until fluffy
- Add eggs and vanilla, beat well
- Gradually add flour mixture, beating well
- Stir in peanut butter chips
- Drop rounded teaspoons onto slightly greased cookie sheet
- Bake 8 to 9 minutes
- Do not over bake!! Cookies will be soft. They will puff while baking and flatten while cooling
- Cool slightly, remove from cookie sheet to wire rack
- Cool completely
