Slow Cooked Chicken and Dumplings

It has been a VERY cold couple of days. I wanted to make something hearty, yummy AND to warm up our stomachs. I did just that with this awesome Slow - Cooked Chicken and Dumpling recipe!


Here are the ingredients you will need:

  • 1 1/2 pounds skinless, boneless chicken breasts, cut into 1 - inch pieces
  • 3 russet potatoes, cut into 1 - inch pieces
  • 2 cups baby carrots
  • 3 (10 ounce) cans condensed cream of chicken soup
  • 1 cup chicken stock
  • 1/2 teaspoon ground black pepper
  • 2 cups all purpose baking mix
  • 2/3 cup milk
Directions:
  • place the chicken, potatoes, carrots into slow cooker
  • stir the soup, broth, and pepper into a small bowl and pour the soup mixture of the chicken and vegetables
  • cover and cook on LOW for 7 to 8 hours [OR on HIGH for 4 to 5 hours] or until the chicken is cooked through
  • Stir the baking mix and milk in a medium bowl. Now, you can do one of two things:
    •  Spoon small scoops of baking mix on top of the chicken mixture - around the outside of the slow cooker. Tilt the lid to vent and cook for 30 to 45 minutes on high until the dumplings are cooked in the center... OR
    • spoon small scoops of baking mix onto a lightly greased cooking sheet and bake for 15 minutes in oven or until they dumplings are cooked through and lightly brown on top
  • I used the first option and it turned out really well; it's just important that you do not put any of the mix in the middle of the crock pot because it will not cook correctly...you need the dumpling mixture to touch the sides in order to heat properly!

This has a really great taste. I was not certain how it would turn out, but I was really impressed that it turned out so well. It can be used in a number of ways. If you wanted to substitute the potatoes with noodles you could have an amazing chicken noodle soup; you could also leave out the potatoes and pour the chicken mixture over a heaping pile of mashed potatoes....mmm the possibilities are endless!!
