Raspberry Stuffed Chocolate Cookies
Monday, February 14, 2011 at 4:57PM In honor of Valentine's Day I decided to make a few treats [as a surprise for Nick and his work buddies]- the next few entries will reflect my cooking craze from earlier today. While I love chocolate, I do have a threshold. I was around SO much of it this morning that I cannot get the smell out of my head and now I do not know if I will make anything chocolaty for a long time.
Here are the ingredients you will need for these yummy Raspberry Stuffed Chocolate Cookies:
- 1 box chocolate brownie mix
- 1/4 cup all purpose flour
- 1/2 cup butter, melted
- 1 egg
- 1 teaspoon vanilla
- Red Raspberry Preserves - buy a jar and use as much as you like, but beware it becomes messy with too much preserves between the cookies
- powdered sugar
- Fresh raspberries
Directions:
- Heat oven to 375 degrees F
- In a large bowl, stir together brownie mix and flour. Add butter, egg and vanilla; stir until blended
- Let dough stand 15 minutes for easier handling
- Shape dough into 24 balls
- Place 2 inches apart on lightly greased cookie sheet
- Bake 10 to 13 minutes or until set and tops appear dry
- Cool on cookie sheet 1 minute, remove from cookie sheet to cooling rack
- Cool completely, about 30 minutes
- Spread 1 1/2 teaspoons preserves on bottom of 1 cookie; top with another cookie, bottom side down.
- Repeat with remaining cookies
- Sprinkle with powdered sugar and place a raspberry on the top of each cookie
