Honey Mustard Pork Chops

Happy Thursday Foodie Friends! I’ve been wishing and hoping for snow for over a year now. I lived on the Mexican border for almost a year, and before we moved it was summertime in the Northeast, so I have not seen substantial amounts of snow since the Winter of 2009-2010. It’s been far too long for me! My last winter in the Northeast was a good one. It was a Snowmageddon and I was in all of my glory prancing around in the streets of Pittsburgh, which were closed and piled with 2 feet of snow. I loved it.

Now it is supposed to snow in the New York and New England region today; BUT NOT IN NORTHERN VIRGINIA! I wanted to move back to the east coast so that I could experience blizzard-like winters, but apparently I have not moved to the right region. I hope this winter is the worst Northern Virginia has EVER seen! Yep. I said it out loud. Now come on snow!!

Anyway, you’re really here for food. I know, I know. Today I have a delicious recipe for you. It’s kind of like a make-ahead recipe, which is perfect for all of you who are trying to save time during the week.

Today I have Honey – Mustard Pork Chops! They were incredibly delicious. They were easy to make. And, they are pretty healthy for you!

Nutritional Information:
Serving Size: 1 pork chop
Calories: 165
Fat: 2 g
Carbohydrates: 9 g

Protein: 19 g

Here is what you will need:

Recipe Adapted from Weight Watchers, New Complete Cookbook

  • ¼ cup Dijon Mustard
  • 2 tablespoons regular Mustard
  • 1 tablespoon honey
  • 1 teaspoon cider wine vinegar
  • ¼ teaspoon black pepper
  • 3 or 4 pork chops

Directions:

  • To make the marinade, stir together all of the ingredients, except the pork

  • Transfer marinade to large zip-close plastic bag; add pork
  • Squeeze out the air and seal the bag and turn to coat the meat
  • Refrigerate, turning back occasionally. Allow it to marinate in the refrigerator for at least 4 hours, but it can be stored overnight

  • Cover a baking sheet with aluminum foil and then grease with cooking spray
  • Broil about 5 inches from heat until cooked through, about 6 to 7 minutes PER side, or until the meat has an internal temperature of 140 degrees F

Nick really liked these chops. I paired them with a simple side salad filled with zero point foods and a side of broccoli with cheese that added only an additional 4 points+. It was the perfect dinner – healthy, filling, and lots of greens.

For something this delicious, spending only 15 to 20 minutes preparing it all is nothing. It will be on the dinner table in no time and you’ll be able to spend as much time as you want with your family!
