Cheeseburger Soup

Happy Tuesday Foodies. I am sad to report that my mom left this morning.  I am beyond sad. She’s my best friend in the whole world and I did not want her to leave. I all but begged her to stay. I cannot wait to see her again.

Now that she is gone all I feel like doing is curling up with Netflix and some hot chocolate and doing absolutely nothing. I want to sulk today. I want to miss my mom. I want to forget about how sad I feel when she is not around. I want to start fresh tomorrow. I may just do that.

I’m going to make this post sweet and simple today, but in honor of my mom. Growing up she made this delicious Cheeseburger Soup that all of my friends loved and I thought I would recreate it. She’s given the recipe to me at least a dozen times, but like the daughter I am I never wrote it down and scoffed it off each time. I didn’t care about learning how to cook. See, now I wish I would have known about this food blog all of those times.

It’s simple to make and easy to eat, but it’s not the healthiest soup for you. Eat it in moderation – like twice a year. Seriously.

Nutritional Info:
Serving Size: 1/8th of the soup
Calories: 403.8
Fat: 18.6 g
Carbohydrates: 33.1 g
Fiber: 2.6 g
Protein: 29.1 g
Points+: 11

 Here is what you will need:

  • 1 pound lean ground beef, fully cooked
  • 7 Russet Potatoes or red potatoes, diced
  • 4 cups chicken or beef broth
  • 1 can diced tomatoes, with some spice
  • 2 tablespoons hot sauce, more to taste
  • Pepper & salt, to taste
  • 1 tablespoon garlic, more to taste
  • 1 tablespoon cayenne pepper
  • 1 tablespoon Cajun seasoning
  • 3 cups cheese, shredded
  • ¼ cup heavy cream or milk

Directions:

  • Add all of the ingredients {EXCEPT milk & cheese} to a large stock pot and bring to a boil


  • Reduce heat to medium and cook, stirring occasionally, until the potatoes are fork tender
  • Add the cheese and milk
  • Cook and stir consistently until the cheese is completely melted and soup
  • Bring the soup to a gentle boil, reduce heat to low and SERVE!

Options Ingredients: ketchup, mustard, cooked & crumbled bacon, jalapeno

You can serve this with homemade croutons, crackers or toasted buns/rolls! This is a DELICIOUS soup and it is packed full of great flavor. For those of you who like spicy foods, this is the soup for you! If you DO NOT like spicy food, then scale back on all of the spicy hot ingredients and compensate with your favorite spices!

You cannot really put anything in this soup that you cannot put on a burger. Well, I wouldn’t recommend lettuce, but you could easily do that if you wanted!

This looks like a perfect soup to make now that grilling season is over! I wish I could reach into the screen and take a bite!

It is cold and rainy here and the soup looks so yummy! Tried to pin and tablet wouldn't let me :( but I will when get home. I will need to make it less spicy for myself and Robbie but The Hubby, Raime and Justin will no doubt spice there bowl right up! Sorry your mom HD to leave, my mom lives in Florida and me in Indy so I understand
