*Guest Bloggers* - Rabo Encendido

Happy Monday Foodies! Today is a slightly different Monday than most because Nick & I are both home together. It’s nice having him around, but he sure does make a mess. That’s the problem with boys, they are oblivious to cleanliness. For instance, Nick will leave his soda cans sitting on the end table and think they just disappear everyday; or, he will make something to eat and leave all of the dirty utensils on the counter and think it is okay to do so; when he gets around to cleaning it up he forgets to clean the counter all of his dirty utensils were sitting on and leaves it there for the ghostly cleaning lady to clean up.

Really? Are you kidding me?

That’s why you don’t see more of us in the kitchen, because I cannot handle all of the mess he makes and does not clean up. It’s annoying. And as I sit here typing about it {& thinking about it all} I can feel my blood beginning to boil.

Sometimes I just wish people were taught the way I was taught. But, alas, the past is in the past; the only thing I can do now is defeat the age old saying ‘you cannot teach an old dog new tricks.’

Luckily for me, I don’t have to worry about any added clutter and mess today because I have a fabulous guest poster. A few weeks ago I stumbled upon two very fabulous women. I fell instantly in love with their personality, their energy and their website.

Mary & Vanessa over at the Coupon Loving Chicks are a mother & daughter combo, whom you will fall instantly in love with. If you don’t, then I suggest you have another cup of coffee or a shot of espresso to wake up & smell their loveliness!  They are full of couponing wisdom, tricks, tips and all-around thoughtfulness.  And I am super excited to have them as my guest blogger today. So without further adieu here are two of my favorites and their delicious recipe contribution to us!

We can’t begin to tell you how very excited we are to be here, today. “Cooking with Mel” is one of our favorite Facebook pages to follow, and we’d like to take this opportunity to thank Melissa, for featuring one of our all-time favorite, family recipes.

“Rabo Encendido” 

(Spicy Oxtail)

Directions:

  • In a large heavy pot, over medium heat, add olive oil to coat bottom of pot. Add and brown meat. Do not deep fry meat, just brown it. Set the temperature to medium-high and add bell peppers and onions and complete seasoning. When onions and peppers are tender, add garlic and stir. Reduce temperature to medium-low and add beef broth and white cooking wine to cover meat.
  • Tip: If liquid is rapidly absorbed, add ½ to 1 additional cups of white wine. A generous amount of white cooking wine is the trick to making a delicious “Rabo Encendido.”
  • Add remaining ingredients, stir, and place lid on pot. Cook for approximately 1 hour, removing lid and stirring, every 20 minutes.
  • Remove the lid and continue to simmer for approximately 1 hour.
  • End result: The desired consistency of the sauce should be thick and the meat should easily come off the bones.
  • Remove and discard bay leaves and serve over steamed white rice.

OMG! – It tastes D-LISH!!!

This looks super delicious!! I lived outside of Miami for a little while during law school and all of my friends were always eating versions of this. I was never brave enough to eat something that was called Oxtail. Now I feel like I HAVE to give it a try. It looks and sounds amazing!!

Hi Mel, :) - We feel honored to have our mother's recipe featured on your blog, today. It seriously makes out hearts smile with joy. ♥ We are <LOL> at your anecdote about the hubby thinking there is a "ghost" cleaning lady. I wonder what's up with that?! They all seem to think there is. ;D --Also, I know what you mean about; never having tried the "Rabo Encendido," because of the name. ;P -- When I was little, my mom would try to talk me into tasting it and I'd NEVER budge, but let me just say; today, it's my all-time favorite dish!!! It is so GOOD - as in OMG!!! lol True Story!! √
