Tomato Bisque and Rice Soup

I wanted to make dinner for Nick last night because I haven't been such a great domestic goddess lately, but I am still not 100% and am struggling with some other health demons. So I wanted to make something quick and easy for me, I ended up making a tomato bisque and rice soup, which turned out marvelous and ended up on Nick's top foods' list. Boy was I surprised.





Here are the ingredients you will need:

 

 

  • 1 can tomato soup
  • 1 can stewed tomatoes, I used Italian style
  • 1 can milk 
  • 1 teaspoon pepper
  • 1/4 teaspoon chili powder
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon Essence
  • 2 teaspoons sour cream
  • 1 teaspoon lemon juice
  • 1/4 cup Parmesan cheese
  • 1 cup water
  • 1 cup white rice
Just a note about the seasoning - you can really season it anyway you want. We personally like some heat to most things, thus the spicier ingredients listed above. However, if you do not prefer that, add whatever your favorite spices in soups are and go with it! 

Directions:
  • Mix the first 10 ingredients [only half of the cheese]  in a large pot on medium - high heat for 15 minutes, stirring occasionally 
  • Pulse the ingredients until creamy and smooth
  • Meanwhile, boil 1 cup water in small pot
  • Remove from heat, add rice and half of the Parmesan cheese, cover and let set for 10 to 15 minutes


Serve Directions:
  • layer some rice on the bottom of a bowl and ladle soup over it... sprinkle with grated Parmesan cheese and serve



Adding the rice is a great way to had some sustenance to ordinary tomato bisque soup and it is so yummy!! I hope you all give this a try. It is super easy, believe me! I have not been feeling up to cooking lately in light of my personal challenges the last 2 or 3 weeks, but this was an easy way to warm up your home and belly in no time!!

The spice and the rice makes this one mean awesome soup!!
