Bacon and Cheese Breakfast Calzones

And since Nick comes from a long line of hearty breakfast eaters I feel a slight sense of obligation to make breakfast every weekend. However, today he got more of a brunch. I found this cool recipe for Breakfast Calzones and decided to get it a try. I tweaked the recipe to my own liking - it called for pepperoni and mozzarella and instead I used cooked bacon and marble cheese. Simple little changes to normal recipes make them your own... don't be afraid to try!

So these are the ingredients you will need:
- 4 eggs
- 1/4 milk
- dash pepper
- 2 teaspoons margarine or butter
- 1 (13.8 oz) can refrigerated pizza crust
- 1/2 cup shredded cheese
- 4 slices bacon
Directions
- Preheat oven to 400 degrees F
- Spray large cookie sheet with nonstick cooking spray
- In medium bowl, combine eggs, milk and pepper, beat until well blended. Melt margarine in medium nonstick skillet over medium heat. Add egg mixture; cook 3 to 5 minutes or until eggs are set but moist sirring occasionally
- Unroll dough; pat to form 14 x 10 inch rectangle
- Cut dough into four 7x5 inch rectangles
- Divide cheese evenly onto half of each rectangle to within 1/2 inch of edges
- Top cheese with bacon and eggs
- Fold un-topped dough over filling, turnover fashion; press edges firmly to seal
- Place on sprayed cookie sheet
- I crumbled some bacon on top and sprinkled some cheese [optional]
- Bake for 11 to 13 minutes or until golden brown

As for this... i also had it heated up the next day and it was just like a "hot pocket". I loved these!!
Wow, it's like a breakfast burrito, but even better. I can't believe I just said that. Not much beats a breakfast burrito. Seriously, looks great.
