Gnocchi covered in a Creamy Gorgonzola Cheese Sauce

We have plenty of leftovers from Thanksgiving so the real quest is to find new ways to finish them all off. Last night I used some of our leftover mashed potatoes to make a great and easy Gnocchi dinner. The recipe is simple and will yield a lot of Gnocchi, so it's a great way to feed a family quickly!!

Ingredients for Gnocchi:

  • 1 to 1 1/2 cups leftover mashed potatoes [or 2 whole potatoes]
  • 2 cups all-purpose flour
  • 1 egg
Directions for Gnocchi:
  • If you do not have leftover mashed potatoes, bring a large pot of salted water to a boil, peel the potatoes and add to pot. Cook until tender but still firm, about 15 minutes. Drain, cool and mash with a potato masher
  • Combine the mashed potatoes, flour and egg in a large bowl. Knead until dough forms a ball. Shape small portions of the dough into a long snake - like shape. On a floured surface cut the rolled dough into half-inch pieces
  • Bring a large pot of lightly salted water to a boil. Drop in Gnocchi and cook for 3 to 5 minutes or until Gnocchi have risen to the top
**if you need to make more, just double the recipe... you'll have A LOT of Gnocchi!!


Now for the creamy and sharp Gorgonzola Cheese Sauce. This is what you will need:
  •  4 oz. Gorgonzola cheese, crumbled
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup milk
  • 1/4 cup heavy cream
  • 2 tablespoons butter
** to make more of the sauce, just recalibrate the ingredients as needed. For example, if you want to use 8 oz  of Gorgonzola cheese just double the remaining ingredients [i.e., 1/2 cup Parmesan, 1/2 cup milk, 1/2 heavy cream and 4 tablespoons butter... that easy!!]

Directions:
  • In a large saucepan whisk  the cheese, milk and butter together
  • cook until sauce is a creamy consistency 
  • remove from heat and set aside until ready to serve Gnocchi
  • When ready, heat the sauce and whisk in the heavy cream and Parmesan cheese 
Pour some of the Gorgonzola cheese sauce over the Gnocchi and serve!! This was such a great meal.

Gnocchi is a favorite of mine. This is the first time I had this cheese sauce. any sauce can go on Gnocchi. I hope you try this you enjoy. Good Job Mel!!

Hey so I made this tonight for dinner and it turned out amazingly perfect!! I used instant cheesy mashed potatoes. I like your recipe better than other bloggers gnocchi recipes. other bloggers recipes call for 2 cups mash, 1 cup flour, 1 egg. yours is the other way around 1 cup mash, 2 cup flour, 1 egg (so basically more flour/less potato) and its soooo much better this way. the other recipes taste too potato-y!! thanks for sharing this. i almost was done with making gnocchi until i found this
