Potato Pancake Breakfast Sandwich

Can you believe I have never had a potato pancake? This morning was the first time eating them and making them. We had some left over mashed potatoes from dinner the other night and I did not want them to go to waste. Therefore, potato pancakes seemed like the best option!

Making these little breakfast cakes was incredibly simple and paired with some eggs and ham made a great breakfast sandwich.

  • mashed potatoes
  • bread crumbs
  • eggs
  • sliced deli ham
  • salt
  • pepper
  • chili powder
  • garlic powder


  • For potato pancakes:
    •  combine mashed potatoes, bread crumbs, pinch of salt, pepper, chili powder and garlic powder together in a large bowl [also, you could add an egg as a binding element - I didn't and they turned out well, but they were kind of fragile]
    • make mixture into a pancake shape, cook in skillet until golden on each side

sliced deli ham
  • In another pan, fry [or scramble] eggs, then warm up ham slices
  • Place potato pancakes on plate, layer with an egg and a slice of ham and top with another potato pancake
  • If you wanted, you could melt some cheese on top. We didn't because the mashed potatoes were cheddar and gave the entire dish a nice cheesy flavor.

This was a great new breakfast! It was an easy way to use up left over mashed potatoes and it was a cool twist on a classic ham and egg breakfast sandwich! I hope you all enjoy!

Break fast was awesome... I like how you have come up with some great ideas for leftovers. Everyone has them so party away with a new dish!!

Hi, I'm Talitha Waugh's (your facebook friend) Mom. I used to make these but without chili powder and garlic. I did not put the eggs & ham between two patties though as it looks like you make them into a breakfast type sandwich? Look good! Thanks

I've never made potato pancakes before! Using them for breakfast sandwiches was great idea and worked well!! I would suggest anybody trying this at least once!! As far as the chili powder and garlic, I added it just to give it a little extra flavor. There is really no reason to add spices you don't like... I hope you continue to check back!
