Chicken Cutlets with Herbs and Gorgonzola Mashed Potatoes
Saturday, October 30, 2010 at 11:59AM I love chicken, Gorgonzola cheese, and mashed potatoes so this dinner was right up my alley. It is a relatively healthy combination with all things considered.
For the chicken, here are the ingredients:
- 1/2 loaf baguette bread [to process into bread crumbs]
- 2 pieces of chicken breasts cut in half
- salt and freshly ground black better
- all purpose flour, for dredging
- 1 large egg
- several sprigs fresh thyme, leaves finely chopped
- 2 to 3 sprigs fresh rosemary, leaves finely chopped
- a handful fresh chives, finely chopped
- 1 1/2teaspoons poultry seasoning
- 1 teaspoon cumin
- olive oil, for sauteing cutlets

Directions:
- Heat the oven to 400 degrees F
- Tear bread into pieces and place on baking sheet. Toast bread until deep golden brown - approximately 10 minutes. Transfer to a food processor and coarsely grind into bread crumbs
- while bread toasts pound out chicken breasts to 1/4- inch thick
- season chicken with salt and pepper
- coat chicken with flour, set aside
- beat egg with splash of water in a shallow dish
- transfer bread crumbs to a cookie sheet and season with herbs and poultry seasoning
- heat a thin layer of olive oil in a large skillet over medium-high heat
- coat chicken in egg then bread crumbs and add to pan. Saute until golden and firm, approximately 3 to 4 minutes on each side
Now, for the gorgonzola mashed potatoes! These turned out so well and supplemented the chicken perfectly.
Ingredients:
- 2 or 3 pounds red potatoes, washed and quartered
- salt
- 4 tablespoons butter
- 3/4 cup heavy cream
- 4 or 5 ounces gorgonzola (or blue cheese...whatever you have on hand), crumbled
- Freshly ground black pepper
Directions:
- Place potatoes in a large stockpot and cover with cold water
- add salt and bring to a boil over high heat
- reduce to medium and cook until fork tender
- drain well and add back to the pot that they were cooked in
- meanwhile, heat butter and cream until hot
- add the crumbled gorgonzola cheese and stir together
- add sauce to potatoes and mash until smooth
- season with salt and pepper
I was not sure how either one of these dishes would turn out because it was the first time making chicken like this and mashed potatoes like this, also [well, at least on my own!]. Honestly, the chicken was perfectly crisp with the breading on the outside and so moist and juicy when you cut into it! I even impressed myself with this one!! It doesn't hurt that I have a supportive boyfriend who is relatively kind with his critique... but I know when he's not totally into a dish. This one, he loved!! woohoo! Each bite of the mashed potatoes had a creamy gorgonzola hint that made them that much more yummy!!
I hope, for your sakes', that somebody tries these recipes because they are well worth the time and effort!

The Chicken was really tender and moist... also the Gorgonzola gave the potatoes a nice flavor it was a nice meal.
