Kicked up Chili and Parmesan Wafers

 

I should give a shout out to my mom - she loves to cook and that love shines right through all of that tasty food she always made me! I was incredibly lucky to have such an amazing cook!! She makes the best of plenty of things, one of which is chili. While I am not making her chili, the chili I did make tonight turned out absolutely amazing!! 
I guess I should also mention that this chili was inspired by a facebook friend - Amy. She posted a link to a website that had plenty of chili recipes! While she has no idea she inspired tonight's dinner, I still think it necessary to shout out to her! So, thanks Amy! :-)

 

The start of the chili.

 

Chili is so simple and versatile. I love it! Here are the simple ingredients:
  • 2 pounds ground beef
  • [1 (16 ounce) can of kidney beans], which I omitted because I cannot stand beans. blek! 
  • 2 (14.5 ounce) cans diced tomatoes, undrained
  • 2 (8 ounce) can tomato sauce
  • 1 medium onion, chopped
  • 1 green pepper, chopped
  • 1 jalapeno, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 tablespoon cayenne chile powder
  • 1 tablespoon cumin [my new favorite spice!!]
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 1 1/2 tablespoon brown sugar
  • 1 tablespoon canola oil 
  • shredded cheese - whatever you have on hand. we had a mixture of mexican cheese
Directions:
  • In a skillet, add oil and beef over medium/high heat. Drain when beef is cooked through
  • Transfer to a slow cooker
  • Add the remaining ingredients
  • Cover and cook on high for about 4hours or on low for 6 hours
  • Garnish servings with cheese
** the ingredients in red are slightly more spicy and should only be added if they are flavors you can appreciate... if you do not like spicy dishes, just omit them... that easy!!

 

 

A good way to make chili fun is to compliment it with  cool parmesan, basil and lemon wafers and/or cornbread. Tonight I made both. [don't judge]

 

The Parmesan Wafers before the oven!

 

The wafers were so easy to make. Here are the ingredients:
  •  1 cup shredded Parmesan
  • 2 tablespoons shredded basil leaves
  • 1/2 tablespoon grated lemon zest

 

Directions:
Preheat oven to 400 degrees F.
  • Mix all ingredients together in a bowl
  • Transfer a heaping tablespoon of parmesan mixtre onto a parchment-lined baking sheet and lightly pat down
  • Repeat with the remaining cheese mixture, spacing the spoonfuls about 1/2 - inch apart
  • Bake for 3 to 5 minutes or until golden and crisp

The Parmesan Wafers were great on the salad the next day for lunch. It was really great!!
