Cheesesteak's Done Right

 

I think it's safe to say we can all enjoy a hearty cheesesteak! I grew up eating cheesesteaks from Newberry sub shop; it's virtually impossible to find another sub shop like that, so I decided to recreate, in my own way, those wonderful cheesesteaks in the comfort of my own home!

 

It is not a secret that subs like this are not only packed full of flavor but also calories. Instead of using ground beef or flat iron steaks [which are perfect for this sandwich, by the way], we used lean ground turkey. It's really up to you what you choose, but we tried to contain the caloric intake!
This is what you need:
  • 2 lb lean ground turkey
  • extra virgin olive oil 
  • grill seasoning
  • 3 cubanelle peppers, seeded and thinly sliced
  • 1 clove garlic, thinly sliced
  • 1/4 cup hot pepper rings, drained
  • 2 tablespoons butter
  • 2 to 3 tablespoons all purpose flour
  • 1 1/2 cups milk
  • salt and ground black pepper
  • 3 cups grated cheese [I used a mixture of white american and colby jack]
  • your choice of bread
    • the first time we made this, we used a 12 inch long loaf of ciabatta bread, but this time we went with more of a sub roll b/c we used ground meat instead of the flat iron steaks

 

 

Now, the important part - putting all of these ingredients to good use.
  • First, coat the bottom of a deep skillet with a tablespoon or so of extra virgin olive oil over medium - high heat. 
  • Add the ground turkey and grill seasoning to taste
  • In another skillet over medium heat, add the cubanelle peppers, the garlic and onions and cook until very tender  [stirring occasionally to prevent burning] - 10 to 15 minutes. 
  • Add some hot pepper juice and hot pepper rings right before you remove the mixture from heat.

 

Heat oven to 250 degrees F
  • While the peppers and turkey are cooking, heat up a sauce pot over medium heat and add the butter.
  • When the butter has melted, whisk in the flour and stir for about a minute
  • Whisk in the milk and season with salt and pepper, to taste.
  • Thicken the sauce for a few minutes, then reduce the heat to low. 
  • When the turkey is completely cooked, warm the bread in the oven
Finally, stir your mound of cheese into the sauce until completely melted!!
To serve, split the bread open and spread as much or as little turkey onto the bread, top the turkey with the peppers and a heaping amount of the cheese sauce!! Then eat away [with tons of napkins in tow :)]

 

Personally, I do not need vegetables with this sandwich [I'd rather have fries!], but my man added some to his plate! It was an absolutely perfect meal. 
However, I warn you not to have any plans for after this meal - you'll be too full to move!
